Baker’s Percentage Recipes behave similarly to Make to Measure, however, quantities are entered as percentages and the UoM for all ingredients in the Recipe Card will be the UoM of the Recipe.
Key Features of Baker’s Percentage Recipes #
- Percentage-Based Quantities:
Each ingredient is listed as a percentage of the total formula weight. - Consistent Unit of Measure (UoM):
The UoM selected on the Recipe Card applies to every ingredient in the recipe.
Example: If grams are selected, all ingredients will follow that UoM. - 100% Rule:
The sum of all ingredients under the “100%” column should total exactly 100% to ensure recipe accuracy.


Converting to a Baker’s Percentage Recipe #
You can convert an existing Make to Measure or Book Recipe into a Baker’s Percentage format. This gives you options to:
- Replace the old recipe with the converted version.
- Create a new Baker’s Percentage recipe (requires a new name and code).
- Download the base recipe PDF.
- Choose how to handle items attached to the recipe:
- Transfer them to the new Baker’s Percentage recipe.
- Retain them only in the original.
